The basic but not the only factor of high quality meat is the animal itself – the input meat.
We offer the meat of young bulls (less than 24 months old) of the very fine AERDEEN ANGUS variety. The bulls are raised in the Pošumaví an Šumpersko regions in south bohemia; a region with vast areas of protected nature reservations, one of the cleanest in the country and even Europe.
But the apex of culinary and nutritional value of beef comes after certain time of maturing process. The maturing process is what gives the fine beef it's characteristic taste and aroma. The meat which we offer is dry-matured for approximately 26 days. The matured meat has very noticeably different properties than beef bought in a grocery store.
Properly matured meat is easier to prepare into desired state and loses less weight during preparation.
The standard form of our meat for sale is steak and two portions are in a package. We will gladly pepare different packaging upon request.
We also offer hamburger meat – the product is a scpecific mix ratio of different kinds of meat - and other kinds of meat that can be used for rolls, baking, stews etc.The packages are usually 1kg.
